Kale Ceasar Salad with Cashew Dressing

Thanksgiving Greetings

One moment we were cheering in the New Year, hunting eggs, and building sand castles and the next we are humming to holiday music in Walmart. Here we are preparing our homes for the 2023 season. Thanksgiving is a traditional American celebration of gathering. Turkey and dressing is typically served in our part of the country, but as we become more health conscious, alternatives are being thrown into the mix.

The next pages of this storybook, share a healthy salad that you might want to add to your menu this year.

Ingredients

Here is a huge crowd pleaser that can accomodate many different allergies or dietary restrictions.

The cashews and chickpeas are also very substantial and filling. This is a great side, but it can also be a delicious vegetarian meal all on it's own!
Kale Salad
  • 1 bag of President's Choice Mixed Kale
  • 1 can of President's Choice Blue Menu chickpeas, rinsed an drained
  • Olive Oil & Salt
  • 1 head of romaine lettuce, washed and torn (optional)
  • President's Choice Parmigiana Reggiano, grated (optional)

Vegan Cashew Caesar Dessing
  • 1/2 cup of President's Choice unsalted cashews, soaked an hour
  • 1/4 cup of water
  • 2 heaping tsp capers
  • 1 tsp President's Choice Dijon Mustard
  • 1 tbsp vegan worcestershire sauce
  • 1 overflowing tbsp of lemon juice (1/2 lemon)
  • 1 tsp garlic powderpepper and salt to taste

Chickpea Croutons

Heat the oven to 400 degrees. On a baking sheet, pour 1-2 tbsp of olive oil to liberally coat the chickpeas and sprinkle with salt. Place them on the middle rack in the oven to toast until crisp and brown for about 15 minutes.

You can occasionally stir to help them cook evenly. You will know they are ready when they are golden and crunchy. Once they are done, let them cool to crisp up even more.

Vegan Cashew Caesar Dressing


In your blender, combine the cashews, water, capers, mustard, worcestershire, lemon juice, and garlic powder. Blend until thick and creamy and well combined. The capers can add quite a bit of salt, but taste the dressing and adjust with any additional salt and pepper as desired.




Like your dressing even more lemony? Feel free to plat with the seasoning to your tastes. Give it one more quick blend to make sure everything is well mixed.

Assembling
your Salad


Empty the kale into a serving bowl. if using romaine, toss it with the kale so that there is an even, colorful mix of leaves. Pour about half the Caesar salad dressing over your greens and toss until every piece is lightly coated.

Toss it Up


Sprinkle your chickpea croutons over your greens and, if using, grate a generous amount of parmesan cheese over everything. I like to layer the ingredients and toss just before serving my guests.
